Chicken Enchiladas Recipe

1 c chicken or turkey, cooked and shredded
1/2 c onion, finely chopped
1 c cheddar cheese, shredded
6-8 flour tortillas (about 8")
Sauce:
1 can cream of chicken soup
1/2 c chicken broth or water
4 oz green chilies, chopped
1/4 t pepper

Directions:
Directions:
Shred chicken or cut into 1" pieces. Chop onion and mix with chicken. Salt and pepper as desired. Set 1/4 c cheese aside for topping. Place about 2 lb chicken mixture down the center of a tortilla. Sprinkle with cheese. Fold tortilla around filling and place seam side down in an 8" square pan. Make sauce and spread over enchiladas. Sprinkle with reserved cheese. Bake 20 minutes at 350º. Pass sour cream to spoon top.

These can be served as part of the plate dinner, or serve alone with shredded lettuce topped with tomatoes, black olives or radishes.
