1 c. sugar
1/4 c. cornstarch
1/4 t. salt
1 1/2 c. boiling water
2 egg yolks
1/3 c. lemon juice
1 T. lemon rind
1 T. butter

Meringue:
2 egg whites
1/4 t. cream of tarter
2 T. sugar

Directions:
Directions:
Combine sugar, cornstarch and salt; add boiling water and cook in top of double boiler until it begins to thicken. Beat egg yolks; add a little of the hot mixture to combine; return to double boiler. Cook until thick. Remove from heat; add lemon juice, lemon rind and butter. Pour into baked pie shell. Cover with meringue and bake at 375* 10 - 15 minutes until it starts to brown.

Meringue:
Beat egg whites with cream of tarter until stiff. Gradually beat in sugar.
