2 1/2 c. white flour
2 c. whole wheat flour
1 T. baking powder
2 tsp. salt
2 large eggs + 2 whites
2 c packed brown sugar
3 c. unsweetened pumpkin puree ( 1 1/2 16 oz. cans)
1/2 c. vegetable oil plus extra for pans*

Directions:
Directions:
Preheat oven to 350º. In a large bowl, stir together flours, baking powder, soda and salt. In a separate bowl , whisk together eggs, egg whites, brown sugar, pumpkin and oil. Add the pumpkin mixture to the dry ingredients and mix until just combined. Turn the batter into two lightly oiled 9 x 5 inch loaf pans and smooth the tops. Bake for 50-60 minutes or until the tops are golden brown and a cake tester inserted into the center comes out clean. Let cool for 10 minutes in the pans on racks. Turn the loaves out onto the racks to cool completely. Each loaf yields 12 slices. * PAM for baking might be a possibility for the pans.
