3-4lbs. fresh spinach, cleaned, de-stemmed and chopped
1 Cup quarter inch diced bacon
2 T. butter
3 C sliced fresh mushrooms
2 T Chipotle puree with Adobe
1/2 C diced Red Bell Pepper
1 1/2 C diced onion
3 T fresh minced garlic
1 1/2 T Lawry's Seasoned Salt
1 t. garlic pepper
8 oz. Velveeta - cut in cubes
8 oz. cream cheese - cut in cubes
Grated Co-Jack for garnish - 1/2 cup

Directions:
Directions:
Brown bacon in saucepan and drain. Add butter to bacon in pan.
Add mushrooms, chipotle puree, onions, garlic, red bell pepper and seasoned salt and garlic pepper. Saute onions and mushrooms until tender. Stir in Velveeta and cream cheese cubes and cook until cheese has melted, stirring continuously. Place spinach in strainer to press and remove all water. Place spinach in cheese mixture. Cook an additional 5 minutes, stirring constantly. Place mixture in casserole and top with grated cheese. Heat in 350 oven for 5 minutes or until cheese is melted.

Optional: Add 1 can corn to mixture when you add in spinach.
