Pesto Chicken and Pasta Recipe

1 (16 oz.) pkg uncooked farfalle (bow tie) pasta
3 T. olive oil + some for pesto mix
1 lb. skinless, boneless chicken - cut into 1" pieces
1 pkg. pesto sauce mix
1/2 c. grated Parmesan cheese
1/4 c. chopped fresh cilantro (optional)
Salt - as needed
Shredded Mozzarella - as desired on individual servings

Directions:
Directions:
1) Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.

2) Heat the olive oil in a large skillet over medium heat. Add chicken pieces. Cook and stir chicken until evenly browned and cooked through (but not too long or the chicken gets tough)

3) Make pesto sauce according to directions. Let simmer until needed.

4) Add cooked chicken to the cooked pasta, pesto sauce, Parmesan cheese and cilantro. Add any salt if needed and stir well. Continue cooking until heated through.

5) Sprinkle desired amount of mozzarella on to each serving as it's dished out.
