1 c. cooked, cooled okra *
2 large tomatoes, cubed
1 tsp. lemon juice
1/2 tsp. salt
1/2 tsp. chili powder
1/4 tsp. pepper
1 tsp. chopped parsley
New Orleans French Dressing (see recipe)
salad greens
1 hard-boiled egg, finely chopped

Directions:

Cut okra crosswise into1-inch slices. In a bowl, combine okra, tomato, lemon juice, salt, chili powder, pepper and parsley. Chill while making dressing.
Add 1/2 amount of dressing to okra mixture; blend well. Chill 1 hour. Pass out rest of dressing.

* Or use one 10 oz. pkg. frozen whole okra, cooked as label directs and drained.

New Orleans French Dressing
1/2tsp. salt
1/2 tsp. sugar
1/2 tsp. pepper
1/2 tsp. paprika
2 Tbsp. vinegar
1/2 c. salad oil
1/2 tsp. Worcestershire sauce
1/2 tsp. prepared mustard

In a large bowl, combine all ingredients; beat with wire whisk or for until well blended. Makes about 3/4 cup.
