1 - lb. sliced white bread, cut into 1 inch cubes
6 t. unsalted butter
2 C. each chopped celery & onions
2 tsp, poultry seasoning
1 tsp. salt
1/2 tsp. pepper
2 lg. golden delicious apples, peeled, cored, diced
1 lg green pepper, finely chopped
3/4 C. (6oz.) dried apricots, quartered
1 tsp. grated orange zest
1/2 C. chopped fresh parsley
1 lg egg, beaten
1 C. chicken broth

Preheat oven to 375 º. in 2 lg jelly roll pans, arrange bread cubes in single layer. Bake 10 min., tossing once or twice, til lightly toasted. let cool. transfer to lg. bowl.

2. In lg. deep skillet, melt butter over med - high heat. Add onion, celery, poultry, seasoning, salt & pepper, cook 10 min, stirring occasionally. Stir in apples, green pepper, & apricots, cook 5 min. longer stirring often.

3. Add apple mixture, orange zest, & parsley to bread crumbs: toss to mix. Stir in egg & chicken broth.
