1/2 C. sugar
1/4 C. light corn syrup
2 T.water
1 tsp. peppermint or spearmint extract
4 drops red green, or blue food coloring

1. Preheat oven to 180 º . Spray lightly baking sheets & a lg. knife. Place baking sheet in oven. In small, heavy 1 qt. sauce pan, over high heat, bring sugar, corn syrub & the water to a boil. Cover sauce pan for 3 min. to wash down any sugar crystals that form on sides of pan. Uncover: attach candy thermometer to side of pan. Continue to boil til mixture reaches 310 º about 2 min.

2. Remove pan from heat: let stand 30 seconds, til bubbles have subsided. With spatula, stir in extract( To tint add a few drops of food coloring make additional batches in other colors, if desired) Pour onto baking sheets, tilting sheet slightly to spread candy mixture to 8 x 6 - inch puddle. Let stand 5 min. til almost firm. With prepared knife, cut crosswise into 1/2 inch wide strips: half strips. Separate strips, return to oven 1-2 min. to soften strips for twisting.

3. Remove a strip & gently stretch & twist into ribbon like icicle. 7 inch long, place on rack to harden. repeat til done. Store flat in air tight container.
