1/4 c sugar
1/4 c (1/2 stick) butter
1 egg
1 c milk
1 c sifted flour
1 tbsp. baking powder
1/2 tsp. salt
1 c quick oatmeal
1/2 cup semisweet chocolate pieces
1/4 powdered sugar

Directions:
Directions:
-In a mixing bowl, combine sugar and butter. Beat with electric mixer until light and creamy, about 5 minutes. Add egg and continue to beat until well blended.

-In another bowl, sift together flour, baking powder and salt. Gradually add flour mixture and milk alternately to creamed mixture, beginning and ending with flour. Stir in oatmeal. Fold in chocolate pieces. Fill greased muffin cups 2/3 full of batter.

-Bake at 425º F 20 minutes or until skewer inserted in middle of muffin comes out hot and clean. Cool on rack.

-When cool, remove from tin and use sifter to sprinkle with powdered sugar or frost with a favorite powdered sugar icing if desired. Makes 12 muffins.
