2 Tbsp. olive oil
1/2 c. broken spaghettini or vermicelli
1 onion, chopped
1 c. long grain rice
2 1/2 c. chicken stock
1 19oz. can chickpeas
1/4 tsp. pepper
salt to taste
2 Tbsp. cilantro, chopped

Directions:

1. Heat oil in a medium saucepan. Add pasta and brown slightly. Add oinon and cook gently until tender, about 5 minutes.

2. Add rice and coat well. Add stock and bring to the boil. Reduce heat , cover and simmer gently for 15 minutes.

3. Add chickpeas, cover and continue to cook for about 10 minutes, until the liquid is absorbed. Stir in salt, pepper and cilantro. Taste and adjust seasonings if required.
