1 english cucumber
1tsp. salt
1.5 c. yogurt cheese* or thick yogurt
2-4 cloves minced garlic
2 Tbsp. resh dill
.25 tsp. hot pepper sauce (optional)

Directions:
Directions:
1. Grate the cucumber and combine with salt. Allow to rest in a sieve over a bowl for 15 minutes. Press out excess liquid.
2. Combine yogurt cheese, garlic, dill and hot pepper sauce.
3. Stir in cucumber and adjust seasonings if necessary.

*To make yogurt cheese place about 2 cups yogurt in a cheesecloth lined sieve and place over a bowl. Set in the fridge and allow to sit until the yogurt is to your preferred thickness.
