Ingredients: Yellow Birthday Cake 4 cups sifted flour 1/4 tsp salt 3 tsp baking powder Sift the dry ingredients together 1 cup shortening or butter 2 cups sugar Crème butter and sugar together 4 eggs beaten separately Crème beaten eggs into the sugar and butter 1 cup milk Mix the milk into the dry ingredients Stir in the butter, sugar and egg mixture Stir in 1 tsp. vanilla flavoring Mix on medium speed for 3-5 minutes Spread in 2 prepared "8" pans Bake 350º for 30 minutes or until toothpick inserted in center comes out clean
Pineapple Filling Mix: 6 tablespoons pineapple juice (may use juice from a can of crushed pineapple) 2 tablespoons flour or 1 tablespoon cornstarch (GF) 1/2 cup sugar 2 egg yolks Boil thoroughly and remove from heat when mixture begins to thicken Add one cup sweetened crushed pineapple (may use a can of crushed pineapple) Mix well and spread on cake as the filling. Ice with fluffy white icing of your choice

Notes: This Pineapple Birthday cake recipe was made by my mother for my birthday for most of my life. My mother would also use the egg whites reserved from the filling to make the white "7 minute frosting." May always use a white or yellow cake mix.
