4 Green Peppers
1 lb. Turkey Burger (or ground beef)
1 Onion, Chopped
2 Cups cooked brown or white Rice
1 Jar store bought salsa
1 Can Black Beans
1 Cup frozen Corn
1 Cup Shredded Cheese (or More)
Salt and Pepper to taste

Cilantro (Optional)

Directions:
Directions:
Preheat oven to 350º.

Cook Turkey Burger and onion in frying pan, add salt and pepper. While that is cooking, chop (and seed) green peppers up to bite size, throw in w/ turkey burger and cook another minute. To the turkey burger mixture add rice, salsa, black beans, corn and stir. Taste to see if more seasoning is needed. Pour mixture into a 9x13 pan sprinkle cheese on top. Put in the oven and bake about 10 minutes or until the cheese it melted.

Optional Chop up Cilantro and sprinkle on top of cheese.

I use to make this recipe as stuffed peppers but the pepper just gets cut up as soon as it hits your plate. So I decided to just chop up the peppers and make it into a casserole.
