4 chicken breasts
1/4 cup flour
1/2 tsp salt or to taste
1/2 tsp pepper
2 tbsp. olive oil
21/2 cups sliced mushrooms
2 cups 18% cream
1 cup champagne

Directions:
Directions:
Lightly dust chicken breasts with flour and a little salt and pepper.
In a large skillet. lightly brown chicken breasts to a nice golden brown in olive oil. Once browned on both sides, add mushrooms and champagne. Cook over med heat, champagne should boil a little, for approx. 1/2 hour. When chicken is tender, transfer to a platter.
Pour cream into skillet. Simmer about 5 mins until slightly thickened. Pour sauce over chicken and serve with favorite veggies.
