3 lbs. sweet potatoes
1/2 c. packed brown sugar
1 tsp. ground cinnamon
1/4 c. butter, cubed
1 Tbsp. vanilla extract

Directions:
Directions:
Peel and slice potatoes. Place in large pot and cover with water. Cover and bring to a boil. Reduce heat; cook, covered for 30-45 minutes or until potatoes can be easily pierced with the tip of a sharp knife. Place in dutch oven or cast iron skillet with small amount of oil or butter. Sprinkle with brown sugar and cinnamon. Dot with butter. Broil for 15 or 20 minutes basting or turning to keep from sticking or burning.
