1 small onion, chopped
1/4 cup chopped bell pepper (about 1/2 a medium-sized pepper)
2 T olive oil
3 cups frozen shoe-peg corn, thawed
2 plum or Roma tomatoes, chopped
1/4 pound smoked sausage, diced
1/4 cup chopped green onion tops
1/4 t. salt
1/8 t. pepper

Directions:

1. Saute onion and bell pepper in hot oil in large skillet over medium heat about 8 minutes, until tender.
2. Add corn, tomato, and sausage and cook 15 minutes, stirring often.
3. Stir in green onions, salt and pepper; cook 5 minutes.
