CRAB CAKES

8 oz. fresh lump crabmeat, drained (check for shells)
3 slices whole grain white bread
1/3 cup mayonnaise
3-4 green onions, sliced
1 t. Old Bay seafood seasoning
1 t. Worchestershire sauce
2 large eggs, lightly beaten
cooking spray

GARLIC-CHIVE SAUCE
3/4 cup light sour cream
1 clove mince garlic
1 T. chopped fresh chives (or green onions)
1/4 t. salt
1/8 t. pepper
salt to taste

GARLIC-CHIVE SAUCE (make first and chill while making crab cakes)
1. Stir together all ingredients in small bowl.
2. Cover and chill 30 minutes before serving.

CRAB CAKES
1. Pick through crab meat to remove any bits of shell.
2. Pulse bread in blender or food processor until finely crumbed
3. Stir together mayonnaise, green onions, Old Bay, and Worchestershire sauce.
4. Gently stir in breadcrumbs and crab meat.
5. Shape mixture into cakes about 4 inches in diameter
6. Cook cakes on a hot griddle or nonstick skillet, coated with cooking spray.
7. Season with salt and pepper.
8. Serve with Garlic-Chive Sauce.

Crab cakes can be kept warm in 200-degree over for up to 30 minutes before serving.
