Grandma Betty's Hamburger Soup Recipe

2 lb ground round
1 large can diced tomatoes with juice
2 cans Campbell consommé OR 4 cups chicken broth
1 can Campbell onion soup OR 1 packet onion dip mix
1/4 C chopped celery
1 Tbsp chopped parsley flakes
3-4 carrots, peeled and sliced
4-5 potatoes, peeled and chopped
cabbage if desired, chopped
1 can drained corn
1/4 C barley
1 bay leaf
1/2 tsp Italian seasoning
2 C water (or to cover)
salt and pepper to taste

Brown and drain beef in large soup pot. Add rest of ingredients and simmer one hour.
