Baked Chicken Parmesan Recipe

4 - 8oz Chicken Breast. (fat trimmed & sliced in half to make 8)
3/4 c. Seasoned Bread Crumbs (I used Italian)
1/4 c. Grated Parmesan Cheese
2 Tbsp. Butter melted (or I used Olive Oil)
3/4 c. reduced fat Mozzarella Cheese
1c. Marinara
Cooking Spray

Directions:
Directions:
Preheat Oven to 450*

Spray a large baking sheet lightly with Cooking Spray
Combine Breadcrumbs & Parmesan cheese in a bowl.
Melt Butter in another bowl. (unless you're using olive oil, then just put
that in a bowl)
Lightly brush Butter or Oil onto the Chicken,dip in Breadcrumb mixture.
Place on baking sheet & repeat with the remaining Chicken.

Lightly spray a little more oil on top & bake in oven for 20 minutes.
Turn Chicken over, bake another 5 minutes.

Remove from oven, spoon about a tablespoon of sauce over each piece of Chicken & top each with 1.5 Tbsp of shredded Mozzarella Cheese.

Bake 5 more minutes or until cheese is melted.
Tip: If your chicken is already done, (like mine usually is) feel free to cover chicken with foil to let cheese melt to avoid overcooking.
