1 tbsp grapeseed oil
3 zucchini, cut into 1/4-inch-thick rounds
salt (to taste)
pepper (to taste)
1/2 cup marinara tomato sauce

3/4 cup shredded Italian-blend cheese
3 tbsp grated Parmesan cheese
1/2 cup turkey sausage, cooked and chopped fine
1 tbsp Italian seasoning

Directions:

Preheat oven to broil.



Heat grapeseed oil in a large pan over medium heat.



Working in batches, add the zucchini and cook, flipping once, until golden, about 1-2 minutes on each side. Season with salt and pepper to taste.



Place zucchini rounds on a sheet pan. Top each round with a little tomato sauce, cheeses, turkey sausage and a dash of Italian seasoning.



Place into preheated oven under the broiler and cook for 1-2 minutes, just until the cheese has melted.



Makes 6 servings.

Not only is this dish easy to assemble, it cooks up in just 10 minutes and is a perfect meal for family members of all ages. Want a speedy clean-up? Throw a pinch of salt on the cutting board before chopping herbs, the friction and weight of the salt will prevent the herbs from sticking to your knife and getting all over your board.
