Lemon Loaf (from Starbucks) Recipe

1 1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3 eggs
1 cup sugar
2 tbsp. butter (softened)
1 tsp. vanilla
1 tsp. lemon extract
1/3 cup lemon juice
1/2 cup oil
Icing (optional):
1 cup icing sugar
2 tbsp. milk
1/2 tsp. lemon extract

Combine flour, baking powder, baking soda and salt.
In another bowl use a mixer to combine eggs, sugar, butter, vanilla, lemon extract and lemon juice. Blend into dry ingredients. Add oil and mix well. Pour into a 9X5 greased loaf pan. Bake at 350 degrees F for 45 minutes or until toothpick comes out clean.
Tip on its side for 10 minutes then take out of loaf pan. When loaf is cooled, drizzle on the icing if desired.
