3 dozen hard boiled eggs, peeled
1 qt. of cider vinegar
3 c. sugar
4 tsp. salt
3 - 16 ounce cans of beets, not pickled, plain

Directions:
Directions:
In a large sauce pan, put vinegar, sugar, salt and beets, with juice. Bring to boil and stir occasionally until sugar dissolves. Let stand until cool.
Add eggs. Place in refrigerator, in a glass jar or bowl, for several days until the eggs become pink through to the yolk. Will keep in the refrigerator for several weeks. If you like, sliced onions can be added prior to cooking the vinegar mixture.
