2-lbs. flank steak
1-tbsp canola oil
1-cup beef broth
1-8 oz. can of tomato sauce
1-sweet onion, sliced
1-green pepper sliced and seeded
2-garlic cloves, minced
1-6 oz. can of tomato paste
1-tsp. ground cumin
1-tbsp. chopped fresh cilantro
1-tbsp olive oil 1-tbsp white vinegar

Directions:
Directions:
Heat canola oil in frying pan and brown flank steak on both sides. Remove steak from pan and put in crock pot. Add beef broth and tomato sauce, along with onion, pepper and garlic. Mix together tomato paste, cumin, cilantro, olive oil and white vinegar and pour over flank steak. Cook on high for approximately 4 hours. Once done, remove steak from crock pot and shred the beef. Serve with white rice, black beans and sweet plantains.
