1 1/2 c. egg whites @ room temperature (about 1 dozen)
1 1/4 tsp. cream of tartar
1/2 tsp. salt
1 c. sugar
1/2 c. sugar
1 1/8 c. sifted cake flour
1 tsp. vanilla
zest of 1 orange

Preheat oven to 375
Whip egg whites until foamy. Add cream of tartar and salt. Whip until makes soft peaks. With mixer running gradually add 1 c. sugar. Whip until stiff and sugar dissolved; about 30 seconds.
Sift remaining 1/2 c. sugar and pre-sifted flour 3 times. Fold into egg whites then fold in vanilla and zest. Spoon into ungreased tube pan. Bake 25-30 minutes. Cool upside down. Glaze with 3/4 cup orange juice and 1 1/2 lb. powdered sugar
