"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Leftover mashed potatoes
Chopped onion
egg
flour

Depending on how many potatoes you have will determine the amounts. Take the egg and whisk, then add onions and potatoes. Bind together with some flour. Take a skillet and get it very hot, add butter. Make patties and place them on the melted butter. Allow the patties to brown nicely before flipping to the other side. The browner, and crunchier the patties the better they are. You can put a lid on the skillet to make sure the potatoes are heated through. A great way to use up left over mashed potatoes.
