Baked Branzino (Mediterranean sea bass) Recipe

2 Branzini around 1 lb. each, cleaned, with head and tail intact.
Olive oil
1/2 tsp. salt
1/2 tsp. pepper
1 lemon (or lime) cut into six or more pieces
6 cloves garlic, diced
Fresh thyme (or rosemary or both)

Directions:
Directions:
Preheat the oven to 400 degrees.

Rinse fish, pat dry and place on lightly oiled baking pan.

Brush fish inside and out with olive oil.

Sprinkle salt and pepper inside and out on the fish.

Spread garlic inside and out.

Stuff cavity of each fish with lemon slices and sprigs of thyme. Cover with a few sprigs of thyme if you like.

Bake on middle shelf, uncovered, for 5 minutes.

Turn fish over and bake 5 more minutes.

Turn oven to broil, and cook fish 3-5 minutes or until skin blisters and fish flakes easily with a fork.

Transfer to serving plates.

I used lime one night because I didn't have a lemon and my wife Margo said it was better than lemon.
