1 gal. corn
2/3 c. sugar
1 qt. water
4 tsp. salt

Directions:
Cut corn off cob. Mix corn and rest of ingredients in a large pan and simmer 10-15 minutes once it starts to simmer. It will turn opaque in color. Cool by sitting in the sink filled with cold water or sit in front of A/C register on thick towels and stir frequently. Package and freeze as soon as possible.

2 feed sacks of corn makes approx. 2 1/2 gal. corn.

The first time I did corn by myself after we were married, I had everything done and it was about midnight. I was so tired I decided it would be cooled by morning and I could package and freeze it when I got up. The next morning it was foaming (spoiled) and we carried it to the ditch. DARN IT! COOL AND PACKAGE ASAP!
