1 PKG. SOFT FLOUR TORTILLAS
1 PKG. SWISS CHEESE
1 ONION
6-8 OZ. CRAB MEAT (I LIKE MORE)
6-8 OZ. ARTICHOKE HEARTS, DRAINED (I LIKE MORE)
1 TSP. SALT
2 TSP. CRUSHED RED PEPPER (I LIKE MORE)
8 OZ. EGG BEATERS
8 OZ. EVAPORATED MILK
2 NINE INCH PIE PANS

August is a great time to catch crabs because they come in to lay their eggs. It's more work, but more fun if you catch your own and clean them so you have the freshest start for the dish. This recipe makes two pies and the first time I made it I ate a whole one by my self ! All you do is layer the tortillas and then the cheese in the pie pan.
Now mix everything else in a bowl and pour it into the pans
Bake in a preheated 350 degree oven for about 40 minutes or until the top is light brown.Let it stand for awhile so it will be firm enough to slice,
firm enough to slice, then get out of the way so you don't get trampled!
