1 3/4 cups unsifted Flour
1/2 tsp, Baking Soda
1 1/2 tsp. Baking Powder
3/4 tsp. Salt
3/4 cup Sugar
1 Egg, beaten
1/4 cup Oil
1 cup Mashed Banana
1/2 cup Milk
2 tsp. Grated Orange Rind

Directions:
Directions:
Preheat oven to 350.

Measure and sift the first 5 ingredients into a bowl. Combine remaining ingredients and stir into the dry mixture. Stir until blended and scrape into a greased loaf pan.

Bake 50 minutes.

I will sometimes add about 3/4 cup chocolate chips to the dry ingredients before mixing.

I also freeze overripe bananas into cup portions to use. Just thaw before using.
