Ingredients: Chicken: 2 whole boneless chicken breasts 2 eggs 2 tbsp water 2 c bread crumbs 2 c finely chopped pecans 2/1 c flour seasoned with salt and cayenne pepper veg oil, for frying
Chutney Mayonnaise: 1 c mayo 2 tsp dijon mustard 1/2 tsp hot pepper sauce 1/2 tsp salt 1 tsp lemon zest 1 tbsp fresh lemon juice 1/4 c mango chutney

Directions:Cut chicken across the grain into 1/2 in. strips. Whisk together eggs and water. Mix together bread crumbs and chopped pecans. Dredge the chicken in the seasoned flour to lightly coat. Dip chicken pieces into the egg mix and then coat them with the pecan/crumb mix.
Place in single layer on tray. Cover with plastic wrap and chill for at least 30 min. (may be held up to 12 hours). Heat 2-3 in oil to 375 degrees in heavy skillet. Fry the chicken pieces for 5-8 min, depending on their size, or until golden brown and cooked. Keep hot in oven until ready to serve. Best when not held long than 1 hour. Serve with chutney mayonnaise or other dips.
