1 T fresh lemon juice
1 1/2 pounds of large shrimp, peeled and deveined
Cooking spray
1 t olive oil
1/2 chopped onion
1 clove garlic, minced
2 T bottled clam juice
1 T white wine
1/2 t. Dried oregano
1/4 t ground black pepper
1 14 1/2 oz.can of diced tomatoes, drained
1/2 cup crumbled feta cheese
2 T freshly chopped parsley

Preheat oven 450º
Combine lemon juice and shrimp in a large bowl, toss well.
Heat a large non-stick skillet over medium-high heat, coat skillet with cooking spray, now add olive oil to skillet, swirling to coat, add onion, sauté 1 minute,add garlic, sauté 1 minute, add clam juice, wine, oregano, pepper, and tomatoes, bring to a boil.
Reduce heat and simmer 5 minutes.
Stir in shrimp, now the entire mixture goes into an 11 X 7 baking dish, sprayed with cooking spray.
Sprinkle cheese evenly over the mixture.
Put in 450º oven and bake for 8 to 10 minutes or until shrimp is completely cooked, do not over cook as shrimp will become tough.
When out of oven, sprinkle with parsley and serve immediately.
