1 Tablsp. olive oil
1/2 cup chopped onion
3 cloves garlic, minced
2 bay leaves
dash crushed red pepper flakes
2 (28 oz.) diced tomatoes......56 ounces
1 (32 oz.) vegetable broth
1/4 cup fresh basil
salt
pepper
1/2 cup plain Greek yogurt, I used cream cheese

Directions:
Directions:
Heat oil to medium heat, add vegetables and cook until soft. Add tomatoes, broth, basil, bay leaves, salt and pepper. Simmer on low for 15 minutes. Remove bay leaves. Before ready to eat, add yogurt/cream cheese with hand blender. Stir in tortellini and cook medium/low for 7-8 minutes. Serve with Parmesan cheese and croutons.
