6 Tbsp chopped onion
3 Tbsp margarine
3 Tbsp flour
3/4 c milk
10 - l5 oz. tuna, drained
3 c cooked rice
1 slightly beaten egg
3/4 c shredded Colby cheese
3/4 tsp salt
Pepper to taste
1 c cornflake crumbs

Pineapple slices
2 Tbsp lemon juice
2 Tbsp brown sugar
1 Tbsp melted margarine

Directions:
Directions:
Cook onion in butter until tender; blend in flour. Add milk; cook and stir until mixture thickens and bubbles. Add next 6 ingredients. Chill several hours. Shape in 15 patties; roll in crumbs. Brown in hot shortening about 4 - 5 minutes on each side.
Serve on broiled pineapple slice - combine lemon juice, brown sugar and melted margarine and brush over slices. Broil 3 - 4 minutes.
