1 1/4 cup flour
1 cup quick cooking oats
1/2 cup sugar
1 Tsp. baking powder
1/2 Tsp. baking soda
1/4 Tsp. salt
2 egg whites
1/2 cup water or skim milk
1/3 cup canola oil
1 cup fresh or frozen blueberries( don't thaw)

Topping: 2 Tbsp. Sugar 1/4 Tsp. cinnamon

In bowl, combine 1st six ingredients. In another bowl, beat egg whites, water and oil. Stir into dry ingredients just until moistened, Fold in blueberries. Fill muffin cups 3/4 full. Combine sugar and cinnamon topping. Sprinkle over muffins, Bake at 400 degrees for 18-22 min. until toothpick comes out clean. Cool 5 minutes before removing from pan.
