Leg of Lamb (best if using fresh New Zealand lamb)
Olive oil
Cracked peppercorns
Sea salt
Rosemary, 6 or 7 sprigs

Directions:
Directions:
Rub lamb with olive oil. Cover with cracked pepper and salt. Stab skin and lay sprigs of rosemary over top. Roast in oven at 300 for 15 minutes. Then turn down to 275. Roast for about three hours. No basting required. Cooking time is dependent on the size of the lamb leg.
