Leg of Lamb (best if using fresh New Zealand lamb)
Olive oil
Cracked peppercorns
Sea salt
Rosemary, 6 or 7 sprigs

Directions:
Directions:
Rub lamb with olive oil. Cover with cracked pepper and salt. Stab skin and lay sprigs of rosemary over top. Roast in oven at 300° for 15 minutes. Then turn down to 275°. Roast for about three hours. No basting required. Cooking time is dependent on the size of the lamb leg.
