1 Large Egg
1⁄2 C. Packed Light Brown Sugar
1 1/3 C. Mashed Ripe Bananas
1⁄2 C. Raisins or Nuts (I crush my Nuts so the kids don't notice them)
1/3 C. Apple Sauce, unsweetened
1 tsp. Vanilla Extract
1⁄2 C. All Purpose Flour
1 C. Whole Wheat Flour
1/4 C. of Ground Flax Seeds
1⁄2 C. Oat Bran (I buy the one from Trader Joe's)
2 tsp Baking Powder
1⁄2 tsp Baking Soda
1 tsp. Ground Cinnamon
1⁄4 tsp. Salt (I use Sea Salt for all the minerals)
Handful, about 1/3 C Chocolate Chips for the top

Directions:

Heat oven to 375 Grease muffin cups, or use paper baking cups. Beat egg and sugar in medium size bowl. When smooth, beat in bananas, raisins or nuts, apple sauce, and vanilla. Let stand a minute. Thoroughly mix flours, bran, baking powder, baking soda, cinnamon, flax, and salt in a large bowl. Add banana mixture and fold in with a spatula just until dry ingredients are moistened.

Scoop batter into muffin cups. Top each muffin with a couple of chocolate chips. Bake 15 to 25 minutes, or until brown and springy to touch in the center. Turn out onto a rack to cool.
