1 c. heavy cream
3/4 c. milk
3/4 c. maple syrup
3/4 c. pumpkin
7 egg yolks
1/2 t. cinnamon
1/2 t. nutmeg
1/8 t. salt

Directions:
Directions:
In a medium saucepan whisk together cream, milk, maple syrup and pumpkin. Bring to simmer over medium heat. Meanwhile, in a large bowl, whisk together egg yolks, cinnamon, nutmeg and salt.
Whisking constantly add hot cream mixture to the egg yolk mixture. Strain through a fine mesh strainer into a large liquid measuring cup (for easy pouring).
Divide mixture evenly among 6 (6 oz.) custard cups or ramekins. Line the bottom of 9x13 pan with a kitchen towel; place cups on top.
Pour boiling water in pan to come 1/2 way up sides of cups. Cover pan with foil. Bake at 325* 40 - 45 minutes or until set. Let cool - cover with paper towel - then plastic wrap. Refrigerate.
