1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup pistachios
1/2 cup rolled oats
1/2 cup dried cranberries
1/2 cup white chocolate chips

Directions:
Directions:
Preheat oven to 350 degrees. Lightly grease cookie sheets or line with parchment paper. Combine butter, brown sugar, sugar, egg and vanilla in a large bowl, beat until light and fluffy. Mix in flour, baking soda, and salt. Stir in pistachios, oats, cranberries, and chocolate chips. Drop by rounded tablespoons onto cookie sheet.
Bake in upper third of oven for 12 -14 minutes or until lightly browned around edges. Cool on wire racks.
