Puffs:
1 c. water
1/2 c. butter or margarine
1 c. flour
1/4 t. salt
4 eggs

Filling:
3/4 c. sugar
1/4 c. flour
1 T. cornstarch
2 c. milk
1 egg, beaten
1 T. butter
1 t. vanilla

Frosting:
1 square (1 oz.) chocolate
1 T. butter
3/4 c. conf. sugar
1 T. boiling water

Puffs:
Heat water and butter to boiling. Add flour and salt; beat. Cook over low heat until mixture forms soft ball. Remove from heat. Add eggs, one at a time, beating after each addition. Drop onto greased cookie sheet. Bake at 375* for 40 - 60 minutes. Cool. Split puffs, fill with filling and top with frosting.

Filling:
Mix flour, cornstarch and sugar. Gradually add hot milk, stirring constantly. Cook in double boiler. Cover and cook 15 minutes. Add butter. Combine egg and salt and add to mixture. Stir and cook until thick. Add vanilla. Cool. For a delicate texture: you can fold in 1/4 c. whipped cream.

Frosting:
Melt chocolate and butter in saucepan. Add sugar and water. Beat. thin with a few drops of water if necessary.
