12 small new potatoes, each halved
1/2 lb baby carrots
8 broccoli spears - or asparagus - or pea pods
1 tbsp. butter
4 5oz salmon fillets
salt and pepper to taste
3/4 c chicken or veg stock or combo of 1/2 c stock and 1/4 c white wine
1 clove garlic, chopped
juice of 1/2 lemon
1 tbsp. chopped fresh dill

Cook the potatoes and carrots in generous amount of cold water until firm tender. Add the broccoli and cook 2 min more. Drain well- cool in cold water and drain again.
Preheat oven to 375 and grease a 9x13 pan with butter, and set in salmon.
Surround the salmon with veg, season with salt & pepper. Combine the stock (& wine),garlic, lemon juice and dill in a bowl. Drizzle over the salmon and vegetables.
Cover and bake 15 min or until the fish is just cooked through.
