Crust:
1/2 - 1 stick butter
1/2 - 2/3 box of vanilla wafers

Filling:
2 lbs. cream cheese
5 eggs
1 c. sugar
1/2 grated lemon & juice (or 3 T. lemon juice)
1 T. vanilla
pinch of salt

Topping:
1 pt. sour cream
1/4 c. sugar
1 t. vanilla
pinch of salt

Crust:
Crush vanilla wafers into crumbs. Mix crumbs and butter together. Line a 10" springform pan with crumb mixture.

Filling:
Beat cream cheese until smooth. Gradually add sugar. Beat in eggs, one at a time. Add lemon juice, vanilla and salt. Mix well and pour into crust. Bake at 350* for 50 - 60 minutes. Reset oven to 450*. Take cake out of the oven and cover with the topping. Return to the oven for 5 minutes. Turn off heat, open door, leave until cool enough to handle, remove from oven and release spring. When at room temperature, store in the refrigerator.

Topping:
Combine all ingredients together and mix well.
