1/4 C Olive Oil
2-3 cloves chopped garlic
1 lb. ground beef
(2) 6 oz. cans of tomato paste
(2) cans diced tomatoes
1 t Oregano
1 t Thyme
1 t Basil
1 t Marjoram
1 t Salt
1 T minced onion
1 bay leaf
pinch of chili pepper flakes

15 Lasagne noodles

Ricotta Mix:
15 oz. ricotta cheese
1/2 C grated Parmesan cheese
1/4 C chopped parsley
1 egg, beaten

1 lb. grated mozzarella

Directions:

Make sauce by heating olive oil over medium heat, add minced garlic and saute for one minute. Add beef and brown. Add remaining ingredients and simmer for an hour.

Cook the lasagne noodles in boiling water until al dente, about 12 minutes.

In a medium bowl, beat egg, add ricotta, Parmesan and parsley.

Heat oven to 350º. Add 1/2 C of sauce to bottom of 9x13 pan. Arrange a layer of noodles on top of sauce.

Dot noodles with half the ricotta mixture; add about a third of the remaining sauce and arrange a layer of a third of the mozzarella. Arrange a second layer of overlapping lasagne noodles. Dot with remaining ricotta, half of the remaining sauce and half the remaining mozzarella.

Top with remaining lasagne noodles, add remaining sauce and a layer of the remaining mozzarella.

Bake until cheese is melted and mixture is bubbly, about 50 minutes. let stand 15 minutes before serving.
