3 1/2 lbs. russet potatoes, chopped to bite size
8 hard boiled eggs, chopped
1 1/2 c. mayo (Hellman's)
1/3 c. honey mustard
1/2 c. sweet pickle relish
1/3 c. minced onion
2 tsp. garlic powder
1 tsp. onion powder
Salt and pepper to taste

Directions:
Boil potatoes until tender but not really mashable with a tablespoon of kosher or sea salt. Drain.
While potatoes are boiling combine everything but the potatoes (obviously since they are boiling!) and eggs. This is when to add the salt and pepper to taste.
Add potatoes to the mayo mixture, combine, then add the eggs and combine.
Chill for about 2 hours and Voila! Bob's your uncle and you got a great tater salad!

Some people may prefer to boil the potatoes whole then chop them. I like the quicker cook time so I chop before hand.
