Crust -
1 c cornflakes, crushed
1/3 c butter, melted
3 tbsp. sugar


Filling -
3 eggs, separated
1/2 c sugar
1/3 c lemon juice
1 tbsp. lemon rind
1 c heavy cream, whipped

Directions:
Directions:
Crust -
Mix ingredients together and press firmly into a 9"pie plate.
Filling -
Beat egg yolks with 1/4 c sugar, until thickened and lemon coloured.
Add lemon juice and rind.
Beat egg whites until stiff, adding remaining 1/4 c sugar, gradually.
Fold egg whites into yolk mixture.
Whip cream and fold into the above mixture. Pour into pie shell.
Freeze 6-8 hours before serving.
