2 medium zucchini
2 pounds chicken, mix of light and dark
@ Tbsp evoo
1 can cream of celery soup
1 tsp. paprika
1/2 tsp. basil
1 medium garlic clove, crushed
1/2 cup drained, chopped canned tomatoes

Directions:
Directions:
Cut zucchini lengthwise in half. Slice diagonally in 1/2 inch thick pieces. Brown chicken in oil, pour off fat. Add soup and seasonings. Cover and cook over low heat 30 minutes - stir occasionally. Add zucchini and tomatoes. Cook 15 minutes or until tender. Makes 4 servings. Serve over white rice.
