2 lbs. lean ground beef
1 (46 oz.) can tomato juice
1 (29 oz.) can tomato sauce
1 1/2 c. chopped onion
1/2 c. chopped celery
1/4 c. chopped green bell pepper
1/4 c. chili powder
2 tsp. ground cumin
1 1/2 tsp. garlic powder
1 tsp. salt
1/2 tsp. ground black pepper
1/2 tsp. dried oregano
1/2 tsp. white sugar
1/8 tsp. ground cayenne pepper
2 c. canned red beans, drained and rinsed

Place ground beef in a large, deep skillet. Cook over med-high heat until evenly brown. Drain, crumble, and set aside.
Add all ingredients to a large kettle. Bring to a boil. Reduce heat and simmer for 1 to 1 1/2 hours, stirring occasionally.

I like to use red onion for this and I don't really measure the veggies that go in. I just eyeball what I think is the right amount.
