2 3/4 c flour
3 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
4 eggs
3/4 c veg oil
2 c sugar
2 cups unsweetened applesauce
3 cups shredded carrots
1 cup raisins
1 cup chopped walnuts
1 tsp vanilla

Directions:
Directions:
In a large bowl, mix flour,baking soda,cinnamon and nutmeg.. Set aside.
With a whisk, beat eggs. Stir in oil, sugar and vanilla. Add applesauce and carrots and mix well. Add to flour mixture, stirring just to moisten. Fold in 1/2 c of walnuts and 1 cup of raisins.
Pour into greased pans and sprinkle with remaining walnuts.Oven @ 350.

Baking Variations:
1.Heavily greased 12 cup tube pan with walnuts on the bottom.
Bake for 65 min. and let cook in pan for 15 before inverting.
2. 13 x 9 pan - 45min.
3. 2 8x8 pans -35-40 min
4. 36 cupcakes - 20-25 min.
