Lg shallot minced
2 T. fat to cool shallot (can be from meat)
1/2 c red wine (or white)
3/4 c. chicken broth
2 t. brown sugar
3 T butter cut into pieces and chilled
1 T thyme minced
Salt and pepper

Directions:
Directions:
Cook shallot in fat over med high heat, stir often until softened about 2 min
Add wine, broth, brown sugar and deglaze
Simmer until reduced to 1/3 c. about 4-6 min.
Remove from heat and whisk in butter, one piece at a time, until melted and sauce is thick and glossy
Add thyme and season with salt and pepper
