Cake:
1 box white cake mix
1 stick butter

Pastry Cream:
2 c milk
½ c sugar
2 tsp vanilla
6 egg yolks
4 TBS flour
1 pinch of salt
4 TBS butter

Fruit Topping:
8 strawberries, sliced
2 bananas, sliced
1 can crushed pineapple, drained

Whipped Cream:
1 c heavy cream
¼ c sugar
1 tsp vanilla

Directions:
Bake cake according to package directions, except replace oil with 1 stick butter. Let cool 2 hours. For the pastry cream, pour the milk, half of the sugar, and vanilla into a saucepan over medium heat. In another bowl, combine the yolks and remaining sugar and whisk until mixture is light. Add in the flour and salt and mix completely. When the milk just begins to boil, remove from heat. Very slowly pour the hot milk into the yolk mixture, stirring constantly. When about half the milk has been added, place all the yolk mixture into the saucepan over medium heat. Mix the cream as it heats, making sure to reach all corners of the pan when stirring. Let boil about 1 minute, stirring constantly until mixture is thick. Remove from heat and add in butter. Place into a bowl and cover with plastic wrap to stop a skin from forming on top of cream. Chill about 1 hour. To make whipped cream, pour whipping cream into a bowl and whip with mixer until almost stiff. Add in sugar and vanilla and continue to beat until peaks form. When cake has cooled completely, remove from pan and slice in half lengthwise. Place bottom layer on a cake plate and spread ½ of pineapple on top. Spread on a thin layer of pastry cream and replace the top layer of cake. On the top of the cake, layer the strawberries and bananas. Top with whipped cream. Chill and enjoy.
