1 lb. Beef Top Round Steak-Cut into 1/2" cubes
3-14-1/2 oz Cans Beef Broth-Low Sodium
2 Cups Water
1/3 Cup Medium Pearl Barley
1 t. Salt
1/8 t. Pepper
1 c. Chopped Carrots
1/2 c. Chopped Celery
1/4 c. Chopped Onion
3 T. Minced Fresh Parsley
1 c. Frozen Peas

In a pan brown beef and drain. Stir in broth, water, barley, salt and pepper. Bring to a boil. Cover and simmer for 1 hour. Add carrots, celery, onion and parsley. Cover and simmer for 45 minutes or until meat and veggies are tender. Stir in peas and heat through.
